About this Recipe
By: Stevie Kennedy
This recipe was inspired by a craving for sushi and since I did not have a sushi kit to make my own rolls, I decided to get all the ingredients and throw it into a bowl and this beautiful creation came from it. This recipe can easily be made into your own. If there is something you do not like, do not add it, the same goes for if you want to throw something extra into your bowl or top it a different way, this recipe is completely flexible!
Ingredients
- 1 cup Jasmine rice
- 1/4 cup Edamame
- 1/3 cup Cabbage
- 1/4 cup Chopped Red Onion
- 1/2 of an Avocado
- 1/4 cup Seaweed Salad
- 1/4 cup Kimchi
- 1/4 cup Ahi Tuna
- 1/4 cup Smoked Salmon
- Topped with:
- Coconut Aminos
- Spicy Mayo
This recipe hits the spot. I love swapping soy sauce for coconut aminos, it adds a great flavor and a slight sweetness. It is also quick and easy to make! I know most of us live a busy life and making good and healthy meals that are effiecent are a must. Once you prep all of your ingredients by chopping the vegetables this recipe can be ready in 5 minutes or less. For the spicy mayo, you can buy it store bought or I personally love creating my own with a good quality mayo and sriracha. My favorites are the Choosen Foods or Primal Kitchen mayos and Yellow Bird Siracha. Both of these products have high quality ingredients and taste delicious!
Brands Used:
* Primal Kitchen Avocado Oil Mayo
* YellowBird Sriracha Sauce
Step by Step Instructions
Step 1
Rinse rice.
Then bring 2 cups of water to a boil. Once water is boiling add 1 cup of jasmine rice. Bring temperature down to a simmer and place a lid on top of the pot. Wait 15 min until rice has absorbed all the water. (If you want a faster option you can do a microwaveable jasmine rice)
Step 2
While rice cooks,
Chop up the red onion and green onion. Slice 1/2 an avocado.
Step 3
Cut the Ahi Tuna and smoked salmon into small pieces.
Step 4
Time to construct your bowl. First add the jasmine rice. Then add the edamame, cabbage mix, red onion, kimchi, seaweed salad, ahi tuna, smoked salmon, and avocado to the bowl.
Step 5
Then top with green onion, coconut aminos, and spicy mayo!
Enjoy!
Extra Step – Spicy mayo
If you would like to make a healthier spicy mayo at home my favorite brands are primal kitchen avocado oil mayo and yellow bird sriracha. Mix those two together for the perfect spicy mayo, with cleaner ingredients.
