This recipe is inspired from the chain-restaurant Cava. It is like a Chipotle but Greek style where you can create your own Greek bowl or choose from one of the recipes they have on their menu. I loved this place but quickly realized I would get a stomach ache after eating there. So, I decided to make my own version at home. This recipe is SO fresh and delicious. It is packed with veggies, protein, and fats, making it the perfect dinner! I like to use the leftovers for my lunch the next day, making my life easy and having a healthy meal ready to go.

Ingredients

  • 1 cup Jasmine rice
  • 1/4 cup Cucumber 
  • 1/3 cup Cherry tomato’s
  • 1/4 cup  Chopped Red Onion
  • 1/2  of an Avocado 
  • 1 cup  Cabbage and Kale mix
  • 1/4 cup Chicken Meatballs  
  • Topped with:
  • Hummus 
  • Tzatziki 

This recipe is fresh and delicious. It is perfect when craving something greek that is quick and easy to make. Power bowls are one of my favorite recipes to make. They are filling, healthy, and taste great. Amylu chicken meatballs are my favorite and can be found at Costco for a great price. I love adding fresh veggies and a healthy fat like avocado and hummus.

Step by Step Instructions

Step 1

Rinse rice.

Then bring 2 cups of water to a boil. Once water is boiling add 1 cup of jasmine rice. Bring temperature down to a simmer and place a lid on top of the pot. Wait 15 min until rice has absorbed all the water. (If you want a faster option you can do a microwaveable jasmine rice)     

Step 2

While rice cooks, finely chop cherry tomatoes, red onion, and cucumber. Slice avocado in thin slices.

 

Step 3

Sauté chicken meatballs on stove top for 4 minutes on each side. (For an alternative quicker method, microwave meatballs for a minute and 30 seconds depending on microwave time may vary)

Step 4

Once everything is prepared it is time to construct your bowl. Start with a base of rice and add the kale and cabbage mixture, cherry tomatoes, red onion, cucumber, meatballs, and avocado.

Step 5

Top with tzatziki and hummus and enjoy!
