I love the fall season, it is my favorite time of the year! So bring on all the pumpkin spice and all the different recipes to make. I make these pancakes all year round so I don’t have to wait for fall to have them. These are full of protein and are just what you need to start the fall season! 

Ingredients

  • 1/2 cup Blended Oats 
  • 1 Scoop Vanilla protein powder  
  • 3 TBSP Pumpkin Purée
  • 1/4 cup  Egg Whites 
  • 1/2 Cup Almond Milk 
  • 1 TSP  Cinnamon 
  • 1 TSP Pumpkin Spice 
  • 1/4 cup NuTrail Keto Granola 
  • Top with:
  • Coconut Whip
  • Organic Maple Syrup

This recipe is perfect for those mornings when you are craving pancakes! They are full of flavor and have a a nice crunch to them with the added granola. I also love to top them with frozen berries. What I do is take 1/2 cup of frozen berries and microwave them to make my own syrup and add coconut whip on top. These can be made all year round for those of us that crave pumpkin spice even when it is not fall!

Step by Step Instructions

Step 1

Take 1/2 cup of oats and add them to a blender. Blend for a few seconds to get an oat flour.

 

Step 2

Add the oat flour, 1 scoop of vanilla protein powder, cinnamon, and pumpkin spice to a bowl and mix together.

Step 3

Then add 3 TBSP of pumpkin purée, a 1/4 up of egg whites, and 1/2 cup of almond milk to the dry mixture. Mix ingredients. If the consistency is too thick add a splash of water or almond milk until it gets to the right consistency. (You do not want it too runny, it is better to have it on the thicker side).

Step 4

Add in a 1/4 of a cup of the NuTrial Keto Granola and mix.

Step 5

Add a scoop of the mixture to a pan and cook for 2 minutes on each side.

Step 6

Top with your favorite toppings and enjoy!
