All ingredients (except the meatballs) from this recipe come from Trader Joe’s. They do sell chicken meatballs in store so you can pick up all ingredients in the store if you want something convenient. I love the Amylu chicken meatballs from Costco that are organic and listed for an amazing price. I top this recipe with nutritional yeast as it adds good flavor and is a dairy free alternative. This is great for dinner and can easily be made for lunch the next day.

Ingredients

  • 1 bag Trader Joe’s Cauliflower Gnocchi
  • 1/4 cup Trader Joe’s Vegan Pesto 
  • 1 cup Spinach
  • 8 Chicken Meatballs (Amylu)   
  • Topped with:
  • Nutritional Yeast  
  • Hot sauce (optional)

This recipe is fresh and delicious. It is perfect when craving something greek that is quick and easy to make. Power bowls are one of my favorite recipes to make. They are filling, healthy, and taste great. Amylu chicken meatballs are my favorite and can be found at Costco for a great price. I also love to top the dish with nutritional yeast and hot sauce for added flavor. If you do not like spice then skip the hot sauce, but if you do, get it a try!

Step by Step Instructions

Step 1

Pre-heat air fryer to 375. Once ready, empty bag of Trader Joe’s Cauliflower Gnocchi and cook for 18 min until crispy.

Step 2

On the stove top sauté spinach.

 

Step 3

Sauté chicken meatballs on stove top for 4 minutes on each side. (For an alternative quicker method, microwave meatballs for a minute and 30 seconds depending on microwave time may vary)

Step 4

Once gnocchi is finished add to the pan with the spinach and chicken meatballs. 

Step 5

Add the pesto and mix all ingredients.

Step 6

Lastly top with nutritional yeast and hot sauce (if you like added spice)
